Our Philosophy
At Nori, omakase is not a menu — it is a conversation between the kitchen and the season. We source from a single farm in the Hudson Valley, one fisherman on the Montauk docks, and a network of foragers we've cultivated over years. What arrives at your table on any given evening is what the earth decided to offer. We listen carefully and do very little else.
The Kitchen
Executive Chef & Owner
Chef Arai spent twelve years in Kyoto — six of them under Michelin-starred master Hiroshi Yamamoto at Kichisen — before returning to New York with a singular purpose: to practice kaiseki not as museum piece, but as living discipline. "Every technique I learned in Japan was an argument for patience," he has said. "I brought that argument here and let New York supply the ingredients."
His approach is architectural. The progression of a meal at Nori — from a single bite of cured hamachi to the final course of houjicha and hand-made sweets — is designed with the same care as a scroll painting: negative space is as deliberate as what fills it. Nothing is arbitrary. Nothing is rushed.

Nori seats sixteen guests per evening, Wednesday through Sunday, at two seatings. Reservations open 60 days in advance. We recommend booking as early as possible.
