Chef Elise Beaumont's kitchen follows the rhythm of the tides and the seasons, sourcing directly from the day boats and small-plot farms that define this coast. The result is cuisine of absolute precision: restrained, luminous, unforgettable. Every plate is the sea at its most eloquent.

Chef Beaumont trained under Eric Ripert at Le Bernardin before opening her own restaurant in coastal Brittany, where she spent six years learning the language of salt, stone, and tide. She returned to the United States in 2018 to open Marée in Newport — a city that reminded her, she says, of the Breton coast she loves.

Her cooking resists decoration. At Marée, the fish is always the hero: pristine, perfectly sourced, treated with the kind of quiet reverence that only comes from decades of devotion. James Beard nominee, two consecutive Michelin Bib Gourmand recognitions, and a recurring entry on Esquire's Best New Restaurants list.
